    Hola Mike, thank you so much for this podcast. I haven’t been in Valencia yet but is definitely a place I will go on one of my recurrent visits to Spain

    I will also go to La Albufera Restaurant in Madrid. This May I’m travelling to Spain with my family, we are staying mostly in Madrid and one week in San Sebastian, and going to this restaurant is on the itinerary already.

    Hola Yuri, thanks very much for your comment. The Albufera is definitely out of the way, but also definitely worth a visit. As good as it gets. Let me know when you’re in Madrid and maybe we can meet over a caña or two!

    Finally a guy who actually promote the real paella! Thank God! there are so much bullshit out there making a business of something they don’t even know and that it should be illegal for totally distorting this dish and making a profit.

    I just discovered your podcasts and I feel like I have been transported to Spain every time I listen. My new habit is to listen as I take my walks. I am no doubt very close to your mother’s age. I studied in Soria at the Instituto Antonio Machado in the 70s so I’m familiar with much of the Spain you speak about except you are bringing me up to date especially with the videos. I would love to have lived in Spain but life takes us on so many paths, not all desires can be filled in one lifetime. You indicated that very sentiment in one of your essays about being Canadian, living in Zaragoza, it seems to me that you are succeeding very well in honoring your Hispanic Canadian heritage.

    Anyway, muchas gracias por todo y buena suerte para el futuro. Favor de enviarme la receta auténtica de paella. Voy a intentarla muy pronto. By the way, I too love Zaragoza. En efecto conocí a un joven pastelero que me llevó al parque nacional de Ordesa un fin de semana.

    Thanks so much, Mary, very kind of you. Ah, Soria, one of my favourite provinces. ¡Soria fría, Soria pura! as Machado wrote. My grandmother was born in Ágreda and I travel around there every year. So many things to discover, and as far off the beaten path as you can get in Spain. More, as you say, than can be enjoyed in one lifetime but it’s fun to try. 🙂

    What a great story…a young pastry chef and a weekend trip to Ordesa! Could be the beginning of a movie.
